About the Recipe
this recipe works for all sorts of fruit, so grab whatever’s in season – strawberries, apricots, figs or pears all work wonderfully!
Ingredients
1 log Cilantro chevre
1 sheet puff pastry
1/4 cup honey, divided
2 small apples (Gala are good)
1 teaspoon chopped fresh rosemary
1/8 teaspoon sea salt
Preparation
Preheat oven to 190C
Line a large rimmed baking sheet with baking paper or parchment
On a lightly floured work surface, roll the pastry out to a 25cm square then transfer it to the baking sheet.
Prick the pastry all over with a fork, then fold in 1-2cm of each edge, forming a double border on all sides.
Sprinkle the cheese inside the border, then drizzle with 2 tablespoons of the honey.
Arrange the apples on top, then sprinkle with rosemary and salt.
Bake until pastry is golden-brown and the apples are crisp-tender – about 30-35mins.
Drizzle with remaining honey, let cool slightly.
Can also be served at room temperature.
